VANCOUVER -- Blue mushroom may sound more like a designer paint colour than an edible delight, but Matthew Unger of Vancouver's Mushboo home-mushroom-growing company says their new "Blue Mushboo", a variety of blue oyster mushroom, is delectable.
Mushboo is offering home kits to grow the delicately blue-tinged mushrooms for foodies and urban farmers interested in sustainable home food harvesting.
The mushroom, a naturally occurring variety, Pleurotus columbinus, is a cold weather variety with a silky texture similar and a rich flavour that is slightly sweeter than the traditional mocha-coloured oyster mushroom.
Mushboo provides sustainable, reusable custom bamboo growing kits that use recycled coffee grounds as the base to grow the mushrooms right in your kitchen.
"You can be cooking and literally tear the mushrooms off and throw them in the pan," said Unger, a zero-waste activist who has spent years developing his kits.
Mushboo starter kits, along with refills, are available at Homsteader's emporium a DIY store for urban farmers at 649 East Hastings Street.
