【摘要】 以粗多糖得率和含量为评价指标,对水提醇沉制备猴头菌多糖(Hericium erinaceuspolysaccharides,HEP)工艺中主要醇沉条件进行了筛选,得出猴头菌多糖醇沉的最佳工艺条件:提取液的浓缩比(粗提液体积∶子实体干重,mL∶g)为3∶1,醇沉浓度70%,加入乙醇时浓缩液温度为40℃,醇沉时间和静置温度分别为8 h和4℃。不同醇沉浓度得到的多糖分子量分布及体外免疫活性测定结果表明,醇沉浓度为40%时,得到的多糖大分子部分占的比例较高,活性较好。醇沉浓度越高,多糖含有的小分子物质越多。
