真空冷冻干燥技术原理及其在食用菌加工方面的应用

【中文摘要】 介绍了真空冷冻干燥技术的原理、设备和干制品特点,以及食用菌真空冷冻干燥的加工要点,并对真空冷冻干燥技术在食用菌加工方面的应用前景进行了展望。

【英文摘要】 The principle of vacuum cold drying technique (VCDT), the required equipments for VCDT, the characteristics of dried products as well as the main points of VCDT of edible mushrooms were described in detail in this paper. And the prospect of VCDT application in edible mushroom processing was also reviewed.
