代料花菇与段木花菇的品质分析与比较研究

【中文摘要】 测试了木屑代料和段木栽培花菇的可溶性蛋白组分、氨基酸、粗蛋白、粗脂肪、粗纤维、碳水化合物、微量元素、维生素和核酸含量。结果表明,可溶性蛋白在木屑花菇中的含量为6.09%,电泳图谱显示有11条谱带;在段木花菇中含量为5.75%,有10条谱带。氨基酸总量在木屑花菇中为18.56%,其中必需氨基酸占34.16%;而在段木花菇中二者分别为14.51%和32.59%。核酸含量在木屑花菇中为3.92%;在段木花菇中为3.61%。粗纤维在木屑花菇中的含量为13.13%;而在段木花菇中仅为7.82%。粗脂肪、碳水化合物的含量在木屑花菇中分别为1.12%和42.77%;在段木花菇中为4.53%和62.01%。维生素B_1、B_2、尼克酸、麦角甾醇及微量元素铁(Fe)、磷(P)、钙(Ca)、锌(Zn)等在木屑花菇中的含量也均高于段木花菇。

【英文摘要】 The nutritional contents of soluble protein, crude fat, crude fibre, carbohydrate, trace element, vitamin and nucleic acid of figured Lentinula edodes cultivated in sawdust medium and logs were tested and analysed. The results indicated that soluble protein content in sawdust - cultivated and log - cultivated figured Lentinula edodes was 6. 09% and 5. 75% resp. , and that 11 and 10 strips were showed in its electrophoretogram resp. . The total amino acid content in sawdust - cultivated figured Lentinula edodes was 18. 56% of which essential amino acid content was 34. 16% , correspondingly, it was 14.51% and 32. 59% in log- cultivated figured L. edodes resp. . The content of nucleic acid, crude fibre, crude fat and carbohydrate in sawdust - cultivated figured Lentinula edodes was3.92%, 13.13%, 1.12% and 42.77% resp., while it was 3.61% , 7.82%, 4.53% and 62.01% in log-cultivated figured L. edodes resp. .
