【中文摘要】 对黄皮疣柄牛肝菌中宏量营养成分、常量及微量元素、氨基酸组成进行了较为全面的分析测定。测定结果表明 :黄皮疣柄牛肝菌中蛋白质含量 35 10 % ,脂肪 1 4 0 % ,粗纤维 12 5 3% ,总糖 9 33% ;元素钙的含量较低为 12 6mg/kg ;氨基酸组成中谷氨酸的含量最高为3 80 %。
【英文摘要】 The macro-nutrients,micro-nutrients and amino acid composition of Leccinum crocipodium(Letellier)Walt.were analyzed.The results showed that protein content was 35.10 percent,fat content 1.40 percent,crude fiber 12.53 percent,total sugar content 9.35 percent.Ca content was 126 mg/kg,lower than those of the general vegetables.In amino acid composition,the GLU content was 3.8 percent,higher than any other amino acids.The results would be the nutritional science evidence for the further development of Leccinum crocipodium(Letellier)Walt.
